F 1 D 0 - 2003 01 01 at -030 Banana Bread 2. Abstract: I've altered the original recipe mostly because I had extra bananas to deal with, and the original one didn't rise nor cook sufficiently. 1.5 c sugar .5 c shortening 7 ripe medium bananas 4 large eggs 3 clementine oranges, chopped coarsely, peel left on, pits removed 3 oz milk chocolate wafers 1 ts instant yeast 2.5 c all purpose flour 2 tb baking powder 1 ts salt .5 c walnut pieces .5 c sunflower seeds Preheat the oven to 350F. Prepare a metal 8x11 pan by lining it. In a large bowl, mix the sugar shortening, banans, eggs, and oranges. I used a very deep stainless bowl, and a hand blender. It goes very quickly. Add the flour, yeast, baking powder, salt. Mix until it is a nice batter. Pour half the batter into the pan. Sprinkle the nuts evenly over the top. Add the rest of the batter over that. Bake for a generous hour. In fact, turned off the oven at 1:10, removing it 10 minutes afterwards. In this case, it rose while baking, but fell again. Different from the last recipe, it remained lighter, even though it fell. This cake has a wonderful citrus smell, and the quantity of bananas gives it all an intense fruity character. Next time I'll find a way to... 1. add more chocolate 2. add cranberries or other sour fruit I still deem this rendition as a success.
